Fincas 575, is my good friend Herbert's farm, and this is the very first coffee we've had from them. I am really super excited to be able to roast and showcase this awesome coffee and present the work that the whole team at Fincas 575 do.
This particular lot from 575 is a CR-95 variety with an Anoxic Natural process, however, the team at 575 call it something different:
Natural de Siempre
- Ripe picking
- Floating in cherry
- 72h closed vessel fermentation
- Stopping with 2 hours of sun
- 8 hours mechanical drying
- Sun-drying for 3 weeks
- 2 weeks stabilisation at 14%
- Finishing afterwards
- The NDS process shows the amazing attention to detail with this coffee and how they create such a clean and bright cup profile that is also beautifully balanced.
I first started chatting with Herbert back in 2016, about coffee roasting I think as LaREB were setting up their new roaster in their lab in Colombia and since then we've kept in touch about all things coffee (and whisky!). At the end of February 2020 just before the pandemic hit Herbert was doing a tour of Europe for LaREB and we finally got to sit down together in person for a night in Edinburgh where Herbert spoke to us about the amazing work LaREB is doing for the coffee growing community in Colombia.
