Hello and happy February! We officially made it through January and the slow march to payday but we did it. We hope we were able to keep you sufficiently caffeinated during this trying time and we're gonna keep the beans flying out the door for all your needs in 2025!

Uganda Midnight Flyer - Process and Harvest

This wonderful coffee is made from the Katanda farmer's community in the Kasese district, located in the southernmost part of the Rwenzori mountain range and processed by Agri Evolve.

The Katanda community is situated near the main coffee station at Nyabirongo in the southern part of Kasese District. Agri Evolve have a strong connection with their community, as they supported the establishment of a clean water supply for them in 2020. The Katanda community consists of 1000 smallholder farmers who cultivate coffee on small parcels of land ranging from 1 to 4 acres. Covering a wide area within the foothills of the Rwenzori Mountains, the Katanda farmers community in Kasese district has altitudes ranging from 1300 to 1600 masl.

The cherries are harvested and collected from 3 central buying centres and then delivered to the Nyabirongo washing station during the main and fly harvests. Upon arrival the coffee cherries are pulped and fermented in large tanks for approximately 24 hours. After washing, the resulting "parchment" is dried either on raised beds or mechanically, depending on various factors. Once fully dried, the parchment is stored in our warehouse until it is ready for export. It is then hulled, graded, and bagged.

Chipp Coffee Co Roastery Update

I feel like I say this every month, but we have once again been mega busy slinging beans to you lovely lot. It feels like Christmas never actually ended and instead carried on for the entirety of January. We genuinely feel the love with every order so thank you again for supporting the Chipp ship. 

In January we also decided to spoil you rotten with two new coffees! The first was a carbonic maceration processed coffee from Myanmar called The Lady. You can expect a strong fruit forward flavour bomb with some boozy notes of sangria and a sweet honey-like finish. It's beautifully balanced and something truly different to broaden your coffee horizons. 

The second coffee we've released this month comes from the Yunnan Province in China which we've respectfully named after the washing station where this incredible coffee is prepared - AulaiThis coffee is created using a unique experimental fermenting technique which combines the coffee with juniper berries during the fermentation process to give a strong gin forward profile for this exquisite bean. Think big notes of gin & juice with a perfectly balanced sweet finish. We've been drinking it a lot in the roastery so if you want it, you'll need to order some before we chug it all ourselves.

Nothing More Carnal Album Cover

As you know we listen to a wide range of music in this roastery, ranging from the mainstream or relaxing to the straight up just weird and jarring. One particular album has stuck out to us this month and it's CARNAL by NOTHING MORE

These guys have been around for a while now but their latest release really seemed like they've elevated their sound to new heights and with enhanced crystal clear production to match. Honestly this album is a banger start to finish but I'd personally recommend checking out 'If It Doesn't Hurt' and 'House On Sand'
