One word keeps cropping up when you hear people in the coffee industry talk about the this coffee; meticulous. That's the only word that truly shows the level of care that goes in to each and every bean from this incredible part of the world. Local farmers, typically manage around 250 coffee trees, deliver their harvested cherries to the Kii factory run by the esteemed Rungeto Farmers' Cooperative (RCS). The RCS has earned a reputation for unparalleled care and attention to detail and in turn producing truly remarkable coffees.
At the Kii factory, only the ripest cherries are accepted and an addition round of hand sorting and floating is conducted to remove any cherries that are less than perfect. After, the coffee is depulped, fermented and thoroughly washed. To ensure the best flavour notes synonymous with Kenya are at the forefront, the coffee is then soaked further in fresh Kenyan water for extended periods.
The drying phase takes place over two weeks on custom designed drying beds to ensure optimal air-flow and temperature control to ensure consistent and exceptional results in each and every bean.
This is the second time we have worked with the incredible farmers at Kii and we hope we can keep bringing their incredible beans straight to you year on year.
