This special washing station is part of Torch Coffee family - founded by the legendary Q-grade mentor Marty Pollack. The Aulai Washing Station is located in Pu'er City, Yunnan Province. The climate is classified as a subtropical monsoon climate, characterized by warmth and humidity, which is beneficial for the growth of coffee trees and the ripening of coffee cherries. The station employs an eco-friendly washing process to effectively address pollution issues common in the initial coffee processing stages, thus enhancing the quality of coffee from the source. Through natural fermentation and meticulous processing techniques, the resulting coffee beans have a clean, refreshing taste with a pleasantly sweet flavour.
This is one of the experimental lots processed by Torch Coffee Lab to assess the impact of fruit in the co-fermentation process. Juniper berries are mixed with water and fermented to achieve the ideal sugar content and pH level. This mixture is then added to coffee cherries to ferment them further before being sent to the drying racks. This unusual fermentation process creates a unique flavour profile with big hits of Gin and Juice!
