Indonesia Kerinci - Anaerobic Natural

Dry January is over so it's time for a big boozy cup of beans to get us all through the frosty, icy dark days of February. This wonderful unique bean is sure to heat you to your core with its big bold flavours and give you the kick you need to get through the dark days. Here at Chipp we are once again, absolutely buzzing to bring you this wonderful bean from Indonesia with a whole new name we think perfectly sums up this bad boy - Thunder Juice. 

Indonesia Kerinci - Process and Harvest

The 320 members of the Koerintji Barokah Bersama Cooperative live and farm on a plateau that sits at the foot of Mount Kerinci on the island of Sumatra. Mount Kerinci is one of the many volcanoes in the Pacific Ring of Fire, a 40,000-kilometer horseshoe-shaped series of 452 volcanoes that are part of an almost constant dance of eruptions and plate movements. Mount Kerinci’s historic eruptions have assured that the surrounding area is lush and verdant thanks to the deep supply of fertile volcanic soil.

With this Anaerobic Natural lot, coffee is first floated and separated by density before being laid on raised beds where workers remove underripes, overripes and damaged cherry. Then, ripe cherry is collected again and sealed in airtight, 20kg plastic bags that are stored in a cool, dry location (with temperatures between 18 and 22 degrees Celsius) for 7 days.

After 7 days, cherry is again laid on raised beds to dry. The beds are located in domes that protect the coffee from rain or harsh sunlight. The parchment will dry here for around 20 to 23 days. When dry, the coffee is milled and sorted by hand.

Farmers receive fair prices for their cherry and have a fixed buyer for their cherries. The coop's profit at the end of the year is either invested in infrastructure to improve quality or is shared with the producers. Farmers also receive technical support and seedlings for shade trees for on and around the farm.

We've just about managed to recover from the Christmas crazies although the first week back was even more nuts than the Christmas rush. You lot can't seem to give us a break! We've been hard at work sourcing beans for the new year and we have loads of new coffees available for you to get your hands on and try out. Firstly we have the wonderful natural processed Fizzy Drop from Ethiopia which brings lovely bright flavours of Lemonade, Blueberry and Parma Violets. We've also released Tropical Rey; a stunning natural processed Geisha from Colombia. This amazing coffee brings wonderfully sweet notes of Pineapple, Mango Sorbet and Campino candies. El Carmen has also made a triumphant return to the roastery after being our roasters choice selection twice in one year we've decided to release it to the general public because it's too good to keep to ourselves. Finally we released Party Bag at the end of December just before we closed and this is a really interesting coffee for the more adventurous types. We absolutely love it's perfect balance of sweetness, zing and funk and we think you'll love it too. 

What We're Listening To 

This month we've been listening to the sweet soothing tones of Lily Kerbey! Lily is going on tour around the UK this February and our roastery manager Rory is lucky enough to be playing guitar for this lovely lady for the entire tour. You may have seen Lily's videos online and not even realised as she's gone viral a number of times playing acoustic emo bangers at weddings. Her most successful covers are Duality by Slipknot and her awesome cover of the Pokemon theme tune! Our personal favourites are Caramel by Sleep Token and her new cover of Sorry You're Not a Winner by Enter Shikari.
