August is behind us and it was a hot one right?! August is also usually our quietest month of the year but you all didn't seem to get the memo and beans have been flying out the door thick and fast! This month we're bringing you a lovely sweet and bright treat from the Puebla region in Mexico where coffee is more than just a profession it's a way of life.

Drizzle Cone - Process & Harvest

Coffee production in Puebla is an art form, perfected over years of experience. After the cherries are harvested, they undergo the washed process, a method that enhances the clarity and complexity of the coffee’s flavors. The cherries are first depulped, separating the beans from the fruit, and then placed in fermentation tanks where the mucilage is broken down. The timing of this step is critical—the farmer carefully monitors the process to ensure the beans reach the perfect balance of flavor.

Once fermented and washed, the beans are laid out to dry. In the Sierra Norte, the weather can be unpredictable, so the farmer is always prepared to protect the beans from rain, using covered drying beds when necessary. The beans are turned frequently to ensure even drying, a painstaking but essential step in producing high-quality coffee.

When the beans are fully dried, they are hulled and sorted by hand, ensuring that only the best beans make it to market. The result is a coffee that captures the essence of the Sierra Norte, with bright acidity, balanced sweetness, and floral notes that are characteristic of this region.

Chipp Coffee Co Roastery Update

This month we finished building out the main bulk of our new unit, we were up to our elbows in flat pack furniture and shelving all so we could move over and create a bigger badder production space to sling more beans than ever before. It all feels very grown up and professional to this bunch of idiots but we're excited to be able to spread the Chipp name further than ever before! 

We've been tasting a boat load of coffees over the last month getting ready for Christmas so we can bring you the best beans for the most wonderful time of year. We have some great coffees coming your way so keep your eyes peeled for all the festive joy your little hearts can handle!

We did some more lovely work with the Old Chapel Studios charity providing coffee for a wonderful songwriters showcase and workshop helping to build the musical community in our lovely city. We love working with these guys, the work they do is so important for the community and we'll continue to support them in any way we can for many moons.

What We're Listening To

This month we were prepping for Leeds Festival by listening to home grown Yorkshire locals Bring Me The Horizon! For those that don't know who these gentlemen are BMTH are metalheads from Sheffield who changed the landscape of the British metal scene with their debut album Count Your Blessings. Since then they have gone through a number of changes to their sound which have contributed to their consistent growth and success culminating in headlining the Leeds/Reading main stage at the end of August and being there personally was one of the greatest shows i've ever seen! Their latest album POST HUMAN: NeX GEn is, in my opinion their best release to date with absolute bangers like Kool-Aid, sTraNgeRs and AmEN! if you haven't listened to them before go check them out!
