
Kenya Donut Jam - Washed Process
We're well in to the back half of 2025, Christmas planning is well underway and we can already hear the faint whisper tones of Mariah beginning to echo through the winds once more. But before then we still have plenty more special little treats to bring your way each and every month. This month is no different and we're bringing you a lovely sweet jammy dream in the form of a peaberry all the way from the Eaagads washing statin in Kenya! Don't ever say we don't treat you.
Kenya Donut Jam - Process and Harvest
This special little bean employs a traditional Kenyan fully washed process. This processing regimen is seen throughout Kenya's specialty coffee regions and is supported by many generations of shared knowledge and skill.
Selected cherries are pre-graded and then de-pulped. The pulped coffee is then fermented for 12 - 48 hours in water tanks to breakdown the remaining mucilage on the bean. After fermentation the coffee, still in its husk (parchment) is washed in clean water grading channels. This series of declining channels allows the heaviest, densest beans to sink. These are processed separately as they represent the highest quality beans. After washing the parchment is soaked in clean water and then dried in the sun on raised African beds for 2-3 weeks where it is periodically turned and covered to protect against moisture or the heat of the midday sun.
Chipp Coffee Co. Roastery Update
We're still busy behind the scenes fitting out our new second unit. We've recently had our offices built and it all feels very grown up and fancy. We've spent an extortionate amount at ikea making it all look nice and we're well on the way to having a space fit for the royals to visit. Once it's all finished our original unit is going in to full production mode with more space for roasting, resting and packing than ever before. If all goes well you'll be seeing more Chipp beans than you've ever seen in the past coming at you thick and fast!
What We're Listening To

We've had a wild selection of tracks playing in the roastery this month but one artist that keeps popping up is Ando San. Making a name for himself on Tik Tok and Instagram Ando San combines musical techniques more commonly found in prog and metal used by guitar revolutionaries such as Tosin Abasi to create interesting grooves and phrases. To top it off he throws insane rap bars over the top create a unique fusion of genres he calls Prog-Hop. Think if Biggie did a collab with Animals As Leaders. We personally recommend Dash Out it's an absolute banger!
