Most coffee trees in Burundi are Red Bourbon for the reasons of quality. Despite the ubiquity of coffee growing in Burundi, each smallholder produces a relatively small harvest. The average smallholder has approximately 250 trees, normally in their backyards. Each tree yields an average of 1.5kg of cherry so the average producer sells approx 200-300kg of cherry annually. 

During the harvest season, all coffee is selectively hand-picked. As most families only have a small number of trees, nearly all harvesting is done entirely by the family.

The yeast (LALCAFE CIMA) added was specially developed for coffee production over a 4 year period of research and trials. These trials shows that CIMA is well suited to better control the wet process', improve the overall cup quality and allows for developed enhanced flavours such as acidity, brightness, floral notes and overall complexity. 

After fermentation, the cherries are left to dry slowly for 2-3 weeks from sunrise to sunset and covered at night. Moisture is carefully monitored and any cherry with visual defects are removed. 

Kibingo washing station is in the commune of Kayanza in northern Burundi. The station itself sits 1893 meters above sea level. The altitude of the farms in the neighbouring hills that supply the washing station varies from 1700 to 1900 meters above sea level.

Kibingo serves 3515 registered coffee growers, spread over 18 hills in the area. All producers are organised in to groups of 30 people, headed by a lead farmer.

The washing station is equipped with 10 fermentation tanks, 2 soaking tanks and a drying field with 165 drying tables and 4 pre-drying tables. Kibingo can process 750000kg of cherry per day.

The washing station participates in a number of farmer outreach and support projects including livestock rearing projects and a range of Farmer Hub projects centred on strengthening cooperatives and improving yields.
