Back again for another year!
That's right we've teamed up with the wonderful humans over at Dog & Hat once again to bring you lucky lot a wonderfully fruity, funky, deep and rich brew from the lovely Lake Ayarza region in Guatemala.

Guatemala Ayarza - Anaerobic Natural Process
This coffee is brought to fruition by a large number of smallholder producers with one of note being Arnaldo López. Arnaldo has been involved in coffee production his entire life, working with his father to plant coffee trees as a young child. Now Arnaldo has five kids of his own who work as part of a family business to grow their coffee cultivation to new heights and provide a platform for their family to grow and improve their quality of life.
The farmers believe the best cherries for natural processing come from high altitudes and near perfect picking techniques. This is why sourcing of this stunning coffee focusses on local small batch deliveries from partners they trust the most to ensure high quality cherries in every batch.
The high altitude in the region is perfect for cultivation and picking but the terrain isn't ideal for processing natural coffees as there is almost no flat land available to spread their cherries out for drying. To get over this hurdle the cherries are transported to the neighbouring region of Amatitlán. This region was famous for coffee production for many years but as the climate has changed it has now become the ideal place for the processing natural coffees due to the perfect combination of hot sun and cool mountain breezes helping to regulate and control the temperature.
During drying the cherries are spread out evenly to a depth of 4-6 inches and turned often throughout the day to promote even drying. Over the first few days they turn from red or yellow to a deep purple and then black. The drying is then finished in a mechanical drier for a few hours to avoid any issues with humidity. This allows more control over the finishing touches of this wonderful coffee and provides are clearer and crisper acidity to this wonderful cup of coffee.
